Jennifer Hudson’s Spicy Chicken Tacos

  • 2 boneless, skinless chicken breasts
  • 1 ½ tsp adobo seasoning (adjust to taste)
  • ½ cup water
  • ½ cup diced tomatoes
  • ½ cup shredded lettuce
  • ½ cup shredded cheese
  • 6 small corn tortillas
  • Hot sauce (optional)

Place chicken, ½ cup water, and adobo seasoning in a slow cooker. Cook on low for 4-5 hours or high for 2-3 hours. Use two forks to shred the cooked chicken. Toss with a little olive oil and extra adobo seasoning if needed for more flavor. Warm tortillas and fill them with chicken, tomatoes, lettuce, and cheese. Drizzle with hot sauce if desired.

Hudson has since become a Grammy-winning singer, actress, and talk show host, known for her powerful voice and inspiring story. In 2022, she became the youngest female EGOT winner, earning an Emmy, Grammy, Oscar, and Tony.
